  1. Cook chicken in olive oil or butter until no longer pink. Set aside and keep warm.
  2. Prepare mashed potatoes according to package directions.
  3. In large saucepan, melt butter, whisk in flour til smooth.
  4. Gradually add milk, stir in seasonings. Bring to a boil. Reduce heat, cook and stir for 1 to 2 minutes or thickened.
  5. Remove from heat. Stir in 3/4 cup Swiss cheese until melted. Add peas, corn and chicken.
  6. Transfer to a 2qt baking dish coated with cooking spray.
  7. Top with mashed potatoes, sprinkle with remaining cheese.
  8. Bake uncovered at 350°F for 25 - 30 minutes. Let stand 5 minutes before serving.
  9. Ready to serve and ENJOY!
