  9. Make ready 1/2 a 15 oz. can of corn (or 1 cup frozen or fresh corn kernels)
  10. Make ready 1/2 a 15 oz. can of tomatoes
  11. Get 1/2-1 teaspoon cumin
  12. Make ready 1-2 teaspoons dried oregano
  13. Prepare 2 bay leaves
  14. Take 3-3.5 teaspoons kosher salt to start
  15. Prepare 1-1.5 Tablespoons fresh squeezed lime juice
  16. Take 1/4 cup chopped cilantro (optional for the cilantro haters, of course)
  17. Get 1 teaspoon fish sauce (optional, but recommended)
  18. Get optional garnish: fried tortilla chips or strips, chopped fresh chilies, onions, cilantro, avocado, and lime wedges
